Feasts are simple: coffee, oil,
Vegetables that grow in soil,
Baked or fried or raw - delight -
Fasting follows starry night.

All to serve and not for self.
Herbs stand watch upon the shelf.
Eat and drink the mystery.
Blessings offered thankfully.

We are on a strict diet. It is mostly vegetarian except for eggs. No to foods like meat, sugar, grains, corn or alcohol. Yes to foods such as sweat potatoes, red onions, walnuts, coffee, millet and olive oil. The intermittent fast starts around 4 pm and ends around 10 am. The diet comes from mixing foods that seemed to work for us. We have tried recommendations from those promoting vegan, vegetarian, keto or diets avoiding lectins. We’re still looking. So if you have recommendations on what works for you, I’d love to hear about them in the comments.

So far this slowing changing diet has kept our weights under control, reduced brain fog and shown promising results on blood tests. The goal is not to live longer, but to serve well as long as we live.

  1. Sounds like an interesting combination, Frank, and removing all of those you mentioned can’t hurt. The fasting is something one of my co-workers did, for religious purposes and he swore by it. I like the idea you’re doing it to stay well in order to serve.

  3. I think it’s all trial and error, but you seem to have found something that works for you. My daughter and I lost weight by eliminating bread rice and pasta for a few months. But it didn’t make me feel better. (K)

      1. Unfortunately I love to eat and I love to cook. It’s something my daughters and I do together every week…but I do eat much less bread and pasta than I used to, so something rubbed off!

  4. I admire your discipline, Frank … says she who just had pizza for dinner! We do try to eat healthily, however, in between uncontrollable urges!

  5. That is some diet and fasting plan. Good for you to keep yourself healthy. I keep it moderate, balanced and in small portions between meat, sweets and vegetables.

  6. I admire your determination to stick to your diet, Frank. I have been vegetarian for many years, am diabetic and should avoid bread and sugar but still find it hard, mainly because my husband still buys bread and sweet things for himself. Luckily, I don’t like alcohol. I like the idea of an intermittent fast. Your poem sums up your diet nicely.

    1. I was pre-diabetic at one point. My initial problem that got me thinking about food was Hashimoto hypothyroiditis. That is under control without medication, but is still present. My wife is very supportive. Her diet is slightly different to match other issues, but we both now weight what we should. Thank you, Kim!

  7. great motivation … I’ve been veggo for most of my life but enjoy dairy and eggs. Try all your local protein substitutes, I have a great one here called Quorn. For decades they were tasteless but now it’s more fashionable they are very tasty 🙂
